Robin, I just found this great story -- thank you for writing it so thoughtfully. We held our 3rd backyard chickens workshop 10 days ago -- now >100 people have taken it. The next one is scheduled for March 20, 2010. We're also planning a "humane slaughter" training at our farm-based learning center in early December 2009. Harsh reality but part of determining to take responsibility for what we eat.
I think it's a while yet before Chicago has a mobile slaughterhouse -- but people can take chickens to one of ~10 "live poultry" butchers around the city who will kill and process them for a small fee.

Angelic Organics is a great little farm. Our daughter took a class in March about goats and loved spending the day at the learning center.
